Egg in a Potato Nest Recipe

250mL shredded extra-old Cheddar cheese
250mL cooked hash brown potatoes
vegetable spray
4 eggs
shredded extra-old Cheddar cheese, for garnish

Method:

1. Combine shredded cheese and hash brown potatoes.
2. Spray 4 ramekins with vegetable spray.
3. Divide cheese and hash brown mixture among ramekins, making a nest.
4. Crack 1 egg in each nest.
5. Pierce egg yolk with a toothpick or fork.
6. Microwave on medium for 5 minutes.
7. Sprinkle with additional shredded cheese.
8. Let stand 3 or 4 minutes before serving.
